Hands up who loves chips and dips? I don’t know about you though, but I am becoming increasingly bored of the same old same old hummus or guacamole concoctions. I guarantee this Stilton dip with its classic combination of creamy Stilton, soured cream, spring onions and chives will have all your mates asking for the recipe. By all means dip with pitta slices or tortilla chips, but I’ve made it a bit ‘skinnier’ by using a rainbow of crudité veggies!
150g Stilton cheese, crumbled
150ml-soured cream
The juice 1 lemon
3 spring onions, finely chopped
1 teaspoon chives, chopped
Sea salt and freshly ground black pepper
Crudité vegetables cut into batons or any shapes that are good to plunge. I love radishes, carrots, cucumber, little gem leaves, celery and peppers.
Pop the Stilton in a bowl and with the back of a fork, mash until it is broken up. Tablespoon by tablespoon mash in the soured cream until combined. Mix in the lemon juice, spring onions, chives and salt and pepper.
Transfer to a dipping bowl and serve with the crunchy vegetables.
