
Most of you would know fish sauce from making Thai curries and while curries have to be up there as one of my favourite things to eat, there is a whole world of scrummy morsels you can make with fish sauce. And don’t be put off by its pretty grizzly smell. It is used in South-east Asian countries in the same way the Italians use anchovies, therefore it tastes more salty than anything else, but it does have a certain something that you can’t get from any other ingredient and I would say it’s irreplaceable when making Thai or Vietnamese food. If you really can’t find it, try light soy sauce instead.
